I am always working to make better food choices for my boys and I, and I encourage others to make better food choices as well.
Last year, after seeing a lot of Facebook posts about Meatless Mondays, and some encouragement from my supervisor I decided to give it a try. It was perfect timing for me because I had made the decision to transition into a healthier lifestyle, and Meatless Monday provided an opportunity for me to become more familiar with various yummy foods that were good for me. I focused less on the fact that I was not eating meat, and more on wanting to eat the foods that would be delicious, nourishing and expand my palate. My goal with Meatless Monday was to eat more veggies, specifically to incorporate green veggies into every meal throughout the day, it is much easier AND more delicious than you might be thinking.Here are a few of my favorite meatless meals for any day of the week:
Breakfast: Spinach & Feta Frittata
Lunch: Tomato & Mozzarella Panini
Dinner: Vegetable Lasagna Rolls
Snack: Fruit/Veggie Smoothie
